I made it! I did it..... It turned out good and I am so proud! LOL
There is a funny story about this cake and how it almost turned out to be a FLOP... Literally!
I had just finished up making this cake and I was in a hurry to get it downstairs to the freezer. I started carrying it down the stairs and I thought, gee.. I should cover this in foil first. So, I came back up to the kitchen and covered it in 2 layers of tin foil, went back downstairs and as I was walking into the entrance of the dark part of the basement where we keep our freezer...... Yup, I tripped over the laundry baskets! OIY, down went me, down went the cake.. I fell with the cookie tray still in my hands and the ice cream cake landed upside down on the floor. THANKFULLY, it was wrapped securely in tinfoil! Cake saved! LOL i didn't know if it would be a jumbled mess when it was unwrapped but, i stuck it into the freezer anyway and waited to unwrap it until the day of my sons birthday party.
It ended up being fine! I had went and got some of this yummy shell chocolate topping to cover the top of the cake. I got the turtles flavor - it was HEAVENLY! LOL
And here is the cake in all its glory!
How I made it:
Once the ice cream was ready, I put it on top of the Oreo crumb crust. Pressed it in and spread half of a bag of chocolate Oreo's that I had already beaten the sense out of with my rolling pin! hehe, that was fun! :)
Then I dumped the other container of Ice cream on that, pressed it down.. covered in foil and put into the freezer to get solid again.
Several hours before i took the cake out and put the remaining Oreo cookies on top of the cake and then Drizzled the yummy turtles flavor - chocolate shell toping on and put it back in the freezer until it was time to put the candles in ;)
And that was my adventure in making my very first ice cream cake. It beat out a dairy queen ice cream cake, hands down!
My son is still raving about it ;) Score for mom! hehe
